Joking aside, this sponge cake comes first to mind for most Russians when thinking about an apple cake. I baked my first one at a school baking lesson years ago, and I still bake it every autumn, now for my daughter’s Birthday. In the Russian language, it’s called “Sharlotka”. It’s simple and delicious. It’s also dairy-free, which makes it a fantastic choice for everyone with dairy allergy and intolerance.

Ingredients:
5 apples
5 eggs
a glass (200g) sugar
a glass (200g) plain floor
butter for the baking form
Recipe:
Peel, core, and slice apples thinly;
Butter the baking form of your choice, you could dust the form with the flour as well, but I have a non-stick form and skip that. Put the apple slices in the form;
Heat the oven at 180C;
Beat the eggs gradually adding sugar until they are white and form a hard foam. That is if you have an electric mixer. Otherwise, just beat the mixture as well as you can ;
Add flour little by little, while mixing with a spoon;
Pour the mixture over the apples;
Put in the oven and bake for 35-40 minutes.
