Three Healthy, Easy, and Delicious Breakfast Ideas

When spring comes and nature wakes up from the long winter, I feel as if I am born again, I wake up too and become motivated once again for taking care of my body and mind, exercise, and eating healthy. I’d like to share with you three breakfast ideas that are easy to make, healthy, and bring energy to start the day. They are colourful and kids friendly too!

The first one is beetroot and eggs. Beetroot is good for digestive health and also is known to improve endurance and performance in athletes. As a Mom spending my days with two energetic kids, I am definitely after some food that will improve my endurance! I buy already boiled beetroot to speed things up. Then I grate it and mix it with mayonnaise. Add to this boiled eggs and a colourful breakfast is ready!

Avocado is simply amazing for our bodies. It contains vitamin E which is known to strengthen the body’s natural defense against illness and infections, and of course is excellent for skin health. It also contains natural minerals like iron, copper, and potassium, and healthy fats. I mash avocado to spread it on toast. I then add salt, pepper, and anything I feel like. It could be chili flakes or tomato or even egg. My baby boy is a big fan of mashed avocado on toast and always joins me for the treat!

Adding berries to the cereals or porridge is our other favourite thing to do. My daughter absolutely loves it. If it’s porridge we also add honey as a much healthier alternative to sugar. Honey is fun for kids, especially if they know how much Winnie de Pooh loves it! As for berries we most often use blueberries, strawberries, and raspberries. The berries are low in calories but high in fiber, vitamins, minerals, and antioxidants. They provide anti-aging effects and protect our bodies against diseases such as cancer, heart disease, and diabetes.
