Two Ten Minutes Meals Inspired by Greek Holidays

Holidays for me are always sunshine and sea. It might be a cliche, but that’s what my body and soul craves when I need to relax and recharge. Unfortunately, the holiday option is not always available.

What is the best next thing? I hope you guessed right! Foooood!! During my time in Greece on holidays and studying, I picked up some ideas that became meals inspired by Greek cuisine. Every time I make them I think of Greece and the wonderful time I had there, and it feels as if a ray of sunshine from Greece reached me here in the UK, touched my head, and whispered in my ear that summer and warmth are coming soon.

Below are the two ten minutes meals inspired by Greek cuisine. They are great for lunch, brunch, or any time of the day and go well with wine too.

Stuffed Pita

Many meals in Greek cuisine are about very fresh ingredients deliciously put together. And the stuffed pita I make reminds me of them. You will need cucumber, tomatoes, parsley or coriander, and mayonnaise to make a salad. You will also need some meat. My favourite is roast beef slices that I buy in Ocado. And you will need pita bread.

Preparation is simple: Warm the pita bread on a pan. Put inside the beef (I cut it into smaller pieces) and add the salad into the pita too. Voila, the meal is ready!

Fried halloumi with tomatoes

There are many delicious ways to make cheese in Greek cuisine. There are also many delicious Greek kinds of cheese. I use Halloumi in this recipe because it’s one of the easiest to find outside of Greece and it tastes fantastically fried or grilled. This meal I picked up while having large student parties in Greek tavernas with meals and drinks flowing onto tables one after another. I had always waited for this particular meal to be served impatiently. The recipe is my interpretation of what I saw on the plate.

Cut halloumi cheese into cubes and fry with olive oil for several minutes until it starts turning golden. Add salt, pepper, and tomatoes cut in wedges, and fry further together with halloumi until tomatoes become slightly soft but not mushy.

A nutritious and delicious meal or snack is ready!
